One ride I would suggest would be to go to Cedar City, about 40 miles north of St. George and take UT-14 east. It will take you up by Cedar Breaks National Monument near the 10,000 ft summit, then enjoy the ride down the backside and be sure to visit Navajo Lake (you can't miss it). 14 eventually tees into US-89 at Duck Creek. It is a very nice, scenic ride especially this time of year with the leaves turning color. Turn left on 89 to go towards Bryce Canyon or turn right to go to Kanab.
Scott, UT-14 will be on my route thanks, brrrrrrrrr dont want any cold, we have enough of that here at home.

Managed to get a lot of riding in Colorado on the last trip. We arrived in Vegas and left from Denver so toured in Utah as well as Colorado, great rides.

Do the Valley of Fire NP around to Hoover Dam and back to LV. It's a thrilling all-day ride which will get you back into Vegas by sunset. Make sure you have heavy duty shades and follow the center lane markers because you'll be riding into the sun on your return!

...Due to changing elevations...and desert type climate...you very much NEED to have clothing that will keep you warm...and cool ! It can be close to freezing in the mornings, especially in the high country -anywhere- east of St George, Utah but within a couple hours you will be down to light clothing as it warms fast ...

Below The St George area (west) be expecting much warmer temps.

I forgot to mention snow. If you're in rain or drizzle at low elevations, it's a good bet it's snowing above. Check UDOT road conditions webpage. We were heading to Cedar City on 14 and there was snow on the road before we reached the summit. Try riding over the summit and down the other side on a couple of inches of snow and not leave clenching marks on your seat. Can't be done.

Try to avoid that. Me, a bike and snow, not a good mix!
