How about thinking of the 7th Annual Bikes, Blues and Barbeque in Fayetteville Arkansas as a geographic compromise for the regional get together ya'll have been discussing. Tulsa would be a good location. Elmer's BBQ is fantastic! There's also St. Joseph or, if you want to go a bit further up I-44, Springfield.

I grew up in MO and my family is from central MO, so I know this route pretty well.
